Ravioloni are a variation of the traditional ravioli being bigger in size and shaped as a triangle. Sealed between two layers of fresh pasta are a variety of fillings, including this artichoke and ricotta cheese stuff in which the flavor of the vegetable is amplified by a hint of Parmesan cheese and black pepper. Ideal with white sauces.
