pappardelle (without eggs)
Pappardelle, either with or without eggs, are Italian noodles that resemble flat and wide ribbons with rippled edges. They are wider than fettuccine and very absorbent and sturdy, making it ideal for thick and rich sauces.
The tomato paste added to the dough gives it a subtle red color without altering the flavor.
